Giving Artichokes Another Chance

Artichoke and Goat Cheese Pizza

You may remember a few weeks back that I blathered on about making stuffed artichokes.  I had many people simply astonished that I didn't like 'em.

So, I decided to give them another try.  This time- letting Mr. Bird's Eye do all the work- and me doing all the eating.

I bought a bag of frozen artichokes and took Scintilla's advice to use them with goat cheese on a pizza.

So, that is just what I did!

I used thawed and dried artichoke hearts, chunks of creamy goat cheese, kalamata olives, some chopped tomatoes, salt, pepper, oregano and olive oil and baked it atop the pizza dough.

The result was a beautiful sight to behold as well as to devour!

I thought the pizza was delicious- artichoke hearts and all.  Now, I'll be finding ways to use them in pasta and dips as well.

    Oooh, looks yummy and I am so glad to hear you loved the artichoke hearts – another one of my favs (there’s really nothing I don’t like, lol). Goat cheese, kalamata olives and all how can you go wrong?! Happy Earth Day!

    Did you make the dough yourself or if not were did you get it?
    I love artichokes so I would love to give it a try…..
    I read your guest article as well. Very nice!!! We will definitely try to eat at IL Latini on our trip to Italy in July.Printed out all the info… Thanks my love :)

    Of course- you are welcome!!!  The dough was from our favorite Wednesday shopping spot- Adams!  And yes- you MUST go to Il Latini ;)

    I’m glad you tried it! I put olives on mine too but I’ll have to try it with the tomatoes as well. Che buono!

    Ha! Yeah, it kinda might be better than the grilled chicken. Or why not grill the chix and toss some on the pizza?? :)
